Soto Ayam is a traditional Indonesian chicken soup with a yellow turmeric broth, usually served with noodles, shredded chicken, eggs, and fresh toppings.

Main Ingredients

  • 1 whole chicken (cut into pieces)

  • 2 liters of water

  • 2 stalks lemongrass (crushed)

  • 3 kaffir lime leaves

  • 2 bay leaves

  • 1 piece galangal (crushed)

  • 1 spring onion (sliced)

  • Salt to taste

  • Cooking oil (for sautéing)

Ground Spice Paste

  • 6 shallots

  • 4 cloves garlic

  • 3 cm turmeric

  • 2 cm ginger

  • 3 candlenuts

  • 1 teaspoon pepper

Toppings

  • Vermicelli noodles (soaked in hot water)

  • Bean sprouts

  • Shredded cabbage

  • Boiled eggs

  • Fried shallots

  • Lime wedges

  • Chili sauce (sambal)


👩‍🍳 How to Cook

  1. Boil the chicken in 2 liters of water with lemongrass, lime leaves, bay leaves, and galangal until the chicken is tender.

  2. Remove the chicken and shred the meat. Keep the broth.

  3. Blend the spice paste ingredients until smooth.

  4. Sauté the spice paste with a little oil until fragrant.

  5. Add the sautéed spices into the chicken broth, stir well.

  6. Add the shredded chicken, salt, and spring onion. Simmer for a few minutes.

  7. Prepare a bowl with vermicelli, cabbage, and bean sprouts.

  8. Pour the hot soup and chicken over the toppings.

  9. Add boiled eggs, fried shallots, lime juice, and sambal.
